Looking for a change-of-pace salad dressing?
If you’re tired of oil and vinegar or looking for a lower-calorie, healthier alternative to that bottle of ranch in the fridge, give this fresh and tangy dressing a spin.
The preparation could not be simpler. Finely slice or grate your ginger root, garlic and cilantro into a bowl and whisk in the wet ingredients.
If you don’t have rice vinegar, you could easily substitute red wine vinegar without losing much.
Also, if you’ve got mint in the garden, you might try that in addition to, or instead of, the cilantro.
Once you’ve made your dressing, don’t feel like you have to confine it to salad greens, either.
I actually spooned this over roasted broccoli, and I’m sure it would taste great on a piece of grilled fish. For additional variations, I bet a teaspoon of honey and a little chopped jalapeno could also take this dressing in some interesting directions.
